In the old days, how did our grandparents prepare hummus with tahini ?!
Lebanon is famous for this plate, but how is it made?
There were no mixers (molinex)
They used to get some garlic, however today we are not going to add any
They put the garlic in the plate
or in a big bowl
They add some salt
They squeeze a lemon
They add the lemon
They use the garlic's pestle
And they mix the salt with the lemon
Then they get
The hummus (chickpeas)
They put the hummus
And they grind it
With the lemon and garlic, though we didn't add any today
the hummus peas need to be well cooked
in order
for it to automatically be turned into a paste
Now
the hummus has become so soft
that
as if it was blended in a mixer
We get the tahini paste (made from sesame)
We add quite a bit of tahini
Yep that is enough
There is a technique in how we mix the hummus
It's not just beating randomly
The pestle need go in this fashion
as we mix it with the tahini
in order to blend in perfectly
Then we swirl it in this fashion
And now we have a hummus with tahini plate
It is warm since the chickpeas were hot
It is really a fresh hummus with tahini plate
We add a bit of chickpeas on top
so that it gives additional flavor
and of course the olive oil
you could always add some tobasco or sumac
some cumin as decoration
In lebanon, they use sumac
they like the fresh sumac
others like the cumin
a small pinch of cumin here
another pinch of cumin there
It makes it more edible
And then how do we finish the plate
with a small piece of mint on top
We place it in the middle
now we have a hummus with tahini plate
